For an easy fasting day breakfast, try this tasty makhana-based uttapam. Quick and easy its a tasty farali breakfast solution.

Ingredients

1 cup roasted makhana (fox nuts), ground to a powder, 1/2 cup rice flour, 1/4 cup urad dal flour, 1/2 tsp salt, Water as needed, 1 small onion, finely chopped, 1 small tomato, finely chopped, 1 green chilli, finely chopped, 2 tbsp fresh coriander leaves, chopped, Oil for cooking

Step 1

In a large bowl, mix the makhana powder, rice flour, urad dal flour, and salt.

Step 2

Gradually add water and whisk to form a smooth batter of pouring consistency. Let it rest for 15-20 minutes.

Step 3

Heat a non-stick tawa or griddle over medium heat. Pour a ladleful of batter onto the centre of the tawa and spread it in a circular motion to form a thick pancake.

Step 4

Sprinkle chopped onions, tomatoes, green chilli, and coriander leaves over the uttapam.

Step 5

Drizzle some oil around the edges and cook until the bottom turns golden brown.

Flip and cook the other side for a minute or two.

Remove from heat and serve hot with coconut chutney or sambar.
