Nagpuri Mixed Dal Vada
Prepared with a rich blend of mixed lentils and powdered spices, this Nagpuri mixed dal vada is best savoured with chai for a delicious mid-day snacking. Don’t forget to serve homemade green or mint chutney along with vadas.

Ingredients
1/2 kg mixed dal, 1 tbsp ajwain, 1 tbsp garam masala, 1 tbsp turmeric powder, 1 tbsp ginger garlic paste, 1 tbsp cumin seeds, 1 tbsp red chilli powder, oil, 2 tsp asafoetida, coriander leaves, curry leaves

Step 1
Start by washing and soaking the mixed dal mixture for 3-4 hours or overnight.

Drain the excess water and prepare a smooth paste of dal and add green chilli to the dal mixture.

Stir cumin seeds and salt into the dal mixture.

Next, crush ginger-garlic-green chilli and add to the dal mixture.

Now, add powdered spices along with coriander leaves and mix everything well. Keep it aside for 10 minutes.

Heat oil in a kadhai and slide small portions of the vadas into the hot oil. Fry until golden brown and crisp.
