Gujarati Panki, A Banana Leaf Steamed Crepe For A Low-Calorie Breakfast

Gujarati Panki Recipe

Panki is a traditional Gujarati dish made from fermented rice flour batter, cooked between greased banana leaves for a soft, fragrant, and subtly spiced pancake-like delicacy, perfect for a light breakfast.

Step 1

1 cup Rice flour, ¼ cup dahi, 2 tsp Minced ginger and green chillies, 1 tsp Cumin seeds (Jeera), roughly pounded, 1 tbsp Coriander, finely chopped (optional), 1 tsp Ghee, Salt, to taste, Ghee or oil, for greasing banana leaves, Fresh banana leaves, washed and cut into circles or slit into rectangles

Step 1

In a bowl, mix the rice flour, ghee, and yoghurt until well combined. Gradually add water to form a batter with a consistency similar to cake or dosa batter.

Step 2

Cover the bowl and allow the batter to ferment for 4-5 hours.

Step 3

After fermentation, add minced green chillies, ginger, salt, jeera, and coriander. Mix thoroughly.

Step 4

Grease the dark green side of the banana leaves with ghee or oil. Pair the leaves together, ensuring the greased sides face each other.

Step 5

Heat a griddle or tawa Place one greased leaf on the griddle (greased side up), add 1 tbsp of batter, spread lightly, and place another greased leaf on top, pressing gently to spread the batter.

Step 6

Cook for 3-4 minutes on one side, optionally covering with a lid. Flip the leaf bundle and cook for another 3-4 minutes on the other side.

Serve the Panki hot with its leaf wrapping intact. Enjoy with coriander chutney and ghee for the best flavour.
