Kerala-Style Masala Choru With Chicken Roast For Dinner
Are you looking for a delicious one pot dish for tonight’s dinner? This Kerala-Style masala choru from Malabar region is perfect for you.
Ingredients:
2 cups basmati rice, 1 tbsp ghee, 6 cashews, 1 small onion, 2 garlic cloves, 2 green chillies, 1 tomato, 1 tsp coriander powder, 1/2 tsp red chilli powder, 1/2 tsp turmeric powder, 1/2 tsp garam masala powder, 4 tbsp frozen green peas, 4 cups water, salt to taste, fresh coriander leaves for garnish
Step 1
In a large pot, heat ghee over medium heat. Add cashews and fry until golden. Remove and set aside.
Step 2
In the same pot, add onions, garlic, green chilies, and tomato. Cook until the tomato is softened and well-mashed.
Step 3
Stir in coriander powder, red chilli powder, turmeric and garam masala. Sauté for about 5 minutes, letting the spices bloom.
Step 4
Add the green peas and water, then bring to a boil.
Step 5
Stir in the rice and season with salt. Bring it back to a boil over high heat.
Step 6
Lower the heat to its lowest setting, cover the pot, and let it simmer until the rice is fully cooked and fluffy.
Step 7
Gently fluff the rice with a fork before serving, then garnish with fried cashews and fresh coriander leaves.
