Kerala Thattukada-Style Parippu Vada
This crispy dal fritter from Kerala is a great way to start your day during Navratri. Here’s how to make Thattukada-style parippu vada at home.

Ingredients:
1 cup Bengal gram, ½ cup shallots, 3 pieces of ginger, 2 bunches of curry leaves, 3 green chillies, 2 cloves garlic, 3 dried red chillies, 1 tsp salt, ½ tsp asafetida

Step 1
Soak the Bengal gram in water for 3-4 hours. Once soaked, drain the water using a sieve, ensuring the gram is dry.

Step 2
Reserve 2 tablespoons of the soaked Bengal gram for later use. In a mixer jar, grind the remaining soaked Bengal gram coarsely, without adding any water. Transfer the ground mixture to a bowl.

Step 3
Crush the shallots, ginger, curry leaves, green chillies, garlic and dried red chillies together using a mortar and pestle or a mixer.

To the ground Bengal gram, add the 2 tablespoons of reserved whole Bengal gram and the crushed spice mix.

Add salt and asafetida and mix everything thoroughly using your hands. Take small portions of the mixture and form them into balls.

Gently press the balls between your palms to flatten them into the shape of fritters.

Heat oil in a deep pan. Once the oil is hot, deep-fry the fritters until they turn crispy and golden brown. Enjoy parippu vadas with coconut chutney.
